Bok Choy Rice Noodle Soup

  • 4 cups chicken broth
  • 1 cup bok choy, chopped into bite sized pieces
  • 1/2 tbsp garlic ginger paste
  • 1/2 small onion, thinly sliced
  • 3 star anise
  • 2 cardamom pods
  • 2 bay leaves
  • 2 tbsp oil
  • Rice noodles
  1. Add oil, star anise, cardamom pods and bay leaves to a large pot over medium heat. Cook for 2 minutes, stirring occasionally.
  2. Add the onions and garlic ginger paste. Cook for 1 minute, stirring constantly.
  3. Add the chicken broth and bring to a rolling simmer, then reduce heat.
  4. Lightly simmer for 45 minutes to 1 hour.
  5. Cook rice noodles as per the instructions.
  6. Add the bok choy and simmer for 10 minutes.
  7. Turn off the element and remove the pot from heat.
  8. Place the desired amount of rice noodles to your bowl and add the broth on top.
  9. Garnish with cilantro and squeeze a lime wedge into it for that extra bit of yum!
