
- 4 cups chicken broth
- 1 cup bok choy, chopped into bite sized pieces
- 1/2 tbsp garlic ginger paste
- 1/2 small onion, thinly sliced
- 3 star anise
- 2 cardamom pods
- 2 bay leaves
- 2 tbsp oil
- Rice noodles
- Add oil, star anise, cardamom pods and bay leaves to a large pot over medium heat. Cook for 2 minutes, stirring occasionally.
- Add the onions and garlic ginger paste. Cook for 1 minute, stirring constantly.
- Add the chicken broth and bring to a rolling simmer, then reduce heat.
- Lightly simmer for 45 minutes to 1 hour.
- Cook rice noodles as per the instructions.
- Add the bok choy and simmer for 10 minutes.
- Turn off the element and remove the pot from heat.
- Place the desired amount of rice noodles to your bowl and add the broth on top.
- Garnish with cilantro and squeeze a lime wedge into it for that extra bit of yum!
